KosherKocktails: Chill Out With Our Desert Sunset

As we look for refuge from the scorching summer heat (not to mention the stress of the current election season), seeking air conditioning won't be enough. We need something more like an iced tea with a real big kick. This mellow-inducing, hot-weather cocktail combines dry gin with the elegant sweetness of St. Germain; to this we add a dose of cold chamomile tea, and some summery apricot jam. To keep with the general mood, we finish it with bitters. 

Per drink:

2 oz dry gin (we recommend Bombay Dry Gin)
2 oz cold chamomile tea (steep 1-2 tea bags in the morning and let your tea cup cool)
0.5 oz St. Germain
0.5 oz lime juice
2-3 teaspoons of apricot jam
2-3 dashes dram honey chamomile bitters

Add the gin, tea, St. Germain, lime juice, and apricot jam to a cocktail shaker and fill halfway with ice. Shake vigorously for 10 seconds and strain into your chilled high-ball glass filled with ice. Apply bitters to your strained drink and stir gently.
